I love brownies. I, like many children, grew up eating brownies. I've been in search for a long time for the perfect brownie recipe. I've said it before and I'll say it again, a cake-like brownie is not a brownie. It's a cake. Brownies are slightly crunchy on top and chewy in the middle. And these brownies fit the bill.
I'm a huge fan of David Lebovitz, as I would be of anyone who spends most of their days fluting around Paris. So, I trust his suggestions. My recipe is an adaptation of his brownie recommendation.

Supernatural Brownies

Ingredients
1 1/2 cups butter (yes, I know, and I've already cut out 1/2 cup from the original!)
8 ounces of chocolate (I use half 70-80% and half 45-60%)
4 large eggs
1/2 tsp salt
1 cup sugar
1 cup firmly packed brown sugar
2 tsp vanilla extract
1 cup all-purpose flour
Directions
Preheat your oven to 350F/180C
Grease a 13"x9" pan, or two 8" squares if you need to. I line the pans with baking paper.
Create a double boiler. I have a special pan, but a heat proof bowl placed on top of a pan of boiling water on the stove works fine.
Combine butter and chocolate in double boiler until all is melted.
Whisk eggs together in a large bowl or mixer.
Add in salt, sugars, and vanilla.
Slowly add in the chocolate and butter mixture.
Gently fold in the flour until combined.
Pour into pan(s) and bake for 40-45 minutes. Tops should have that nice crunchy, shiny crust. A knife will not come out clean,. because you want a bit of ooey gooey chewiness!
Let it cool before attempting to gorge yourself (its hard, I know, but its worth it!).
